- 1 sheet of puff pastry
- 2 medium zucchinis
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1 egg
- Salt to taste
- Pepper to taste
- 1 tablespoon olive oil
- Fresh herbs for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Roll out the puff pastry and place it in a tart pan.
- In a bowl, mix ricotta, Parmesan, egg, salt, and pepper.
- Spread the cheese mixture over the pastry base.
- Thinly slice the zucchinis.
- Arrange the zucchini slices in a rosette pattern on top of the cheese mixture.
- Drizzle olive oil over the zucchini.
- Bake for 30-35 minutes or until the pastry is golden brown.
- Allow to cool slightly, then garnish with fresh herbs before serving.
Notes
- Use a mandoline for even zucchini slices.
- Experiment with different cheeses if desired.
- Can be served warm or at room temperature.
