Description

A flavorful mix of roasted vegetables seasoned with zaatar.


Ingredients

  • 2 cups of chopped carrots
  • 2 cups of chopped bell peppers
  • 2 cups of zucchini, sliced
  • 1 cup of cherry tomatoes
  • 3 tablespoons of olive oil
  • 2 tablespoons of zaatar seasoning
  • Salt to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine all the chopped vegetables.
  3. Drizzle olive oil over the vegetables.
  4. Add zaatar seasoning and salt. Toss to coat evenly.
  5. Spread the vegetables on a baking sheet.
  6. Roast in the oven for 25-30 minutes, stirring halfway through.
  7. Remove from the oven and serve warm.
