Description
A flavorful mix of roasted vegetables seasoned with zaatar.
Ingredients

- 2 cups of chopped carrots
- 2 cups of chopped bell peppers
- 2 cups of zucchini, sliced
- 1 cup of cherry tomatoes
- 3 tablespoons of olive oil
- 2 tablespoons of zaatar seasoning
- Salt to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine all the chopped vegetables.
- Drizzle olive oil over the vegetables.
- Add zaatar seasoning and salt. Toss to coat evenly.
- Spread the vegetables on a baking sheet.
- Roast in the oven for 25-30 minutes, stirring halfway through.
- Remove from the oven and serve warm.
Notes
- Feel free to add any other vegetables you like.
- Serve with yogurt or tahini sauce for dipping.
