Ingredients

- 2 cups basmati rice
- 1 whole chicken, cut into pieces
- 2 onions, sliced
- 4 cloves garlic, minced
- 2 tomatoes, chopped
- 4 cups chicken broth
- 3 tablespoons mandi spice mix
- 1/4 cup olive oil
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Rinse the basmati rice under cold water until the water runs clear.
- Heat olive oil in a large pot over medium heat.
- Add sliced onions and sauté until golden brown.
- Add garlic and chopped tomatoes, cook for 2 minutes.
- Add chicken pieces and season with mandi spice mix and salt.
- Cook the chicken until browned on all sides.
- Add chicken broth and bring to a boil.
- Add the rinsed rice, stir gently, and reduce heat to low.
- Cover and cook for 20-25 minutes until rice is tender.
- Fluff rice with a fork and garnish with fresh cilantro before serving.
