A creamy and comforting white chicken chili that warms you up.


Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (4 oz) diced green chilies
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 tsp cumin
  • 1 tsp oregano
  • 1 cup sour cream
  • 1 cup shredded Monterey Jack cheese
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the chicken over medium heat until no longer pink.
  2. Add onion and garlic, sauté until soft.
  3. Stir in green chilies, white beans, chicken broth, cumin, and oregano.
  4. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. Remove chicken, shred it, and return to the pot.
  6. Mix in sour cream and cheese. Stir until melted.
  7. Season with salt and pepper to taste.

Notes

  • Top with cilantro or avocado for added flavor.
  • Can substitute chicken thighs for more flavor.
  • Adjust spice by adding jalapeños if desired.
