A creamy and comforting white chicken chili that warms you up.
Ingredients

- 1 lb boneless, skinless chicken breasts
- 1 can (15 oz) white beans, drained and rinsed
- 1 can (4 oz) diced green chilies
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 tsp cumin
- 1 tsp oregano
- 1 cup sour cream
- 1 cup shredded Monterey Jack cheese
- Salt and pepper to taste
Instructions
- In a large pot, cook the chicken over medium heat until no longer pink.
- Add onion and garlic, sauté until soft.
- Stir in green chilies, white beans, chicken broth, cumin, and oregano.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Remove chicken, shred it, and return to the pot.
- Mix in sour cream and cheese. Stir until melted.
- Season with salt and pepper to taste.
Notes
- Top with cilantro or avocado for added flavor.
- Can substitute chicken thighs for more flavor.
- Adjust spice by adding jalapeños if desired.
