Ingredients
Scale
- 2 filet mignon steaks (6–8 oz each)
- Salt (to taste)
- Black pepper (to taste)
- 2 tablespoons olive oil
- 2 tablespoons butter
- 2 cloves garlic, crushed
- Fresh rosemary or thyme (optional)
Instructions
- Take the filet mignon out of the refrigerator and let it come to room temperature for about 30 minutes.
- Season both sides of the steaks generously with salt and black pepper.
- Heat olive oil in a skillet over medium-high heat until hot.
- Add the steaks to the skillet and sear for 4-5 minutes without moving them.
- Flip the steaks and add butter, garlic, and herbs to the skillet.
- Baste the steaks with the melted butter for another 4-5 minutes for medium-rare.
- Remove the steaks from the skillet and let them rest for 5 minutes before serving.

- Adjust cooking time for desired doneness.
- Use a meat thermometer for accuracy.
