Description
A hearty vegetarian lasagne made with lentils and spinach.
Ingredients

- 9 lasagne sheets
- 1 cup lentils, cooked
- 2 cups spinach, fresh
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can diced tomatoes
- 2 cups ricotta cheese
- 2 cups mozzarella cheese, shredded
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon pepper
Instructions
- Preheat oven to 375°F (190°C).
- Sauté onion and garlic until soft.
- Add cooked lentils, spinach, diced tomatoes, oregano, salt, and pepper. Cook for 5 minutes.
- In a baking dish, spread a layer of the lentil mixture.
- Add a layer of lasagne sheets, followed by ricotta cheese.
- Repeat layers until ingredients are used, finishing with mozzarella cheese on top.
- Bake for 30-35 minutes until cheese is bubbly and golden.
Notes
- Let the lasagne sit for 10 minutes before serving.
- Can be made ahead and refrigerated.
- Substitute other vegetables if desired.
