Description

A hearty vegetarian lasagne made with lentils and spinach.


Ingredients

  • 9 lasagne sheets
  • 1 cup lentils, cooked
  • 2 cups spinach, fresh
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 2 cups ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Sauté onion and garlic until soft.
  3. Add cooked lentils, spinach, diced tomatoes, oregano, salt, and pepper. Cook for 5 minutes.
  4. In a baking dish, spread a layer of the lentil mixture.
  5. Add a layer of lasagne sheets, followed by ricotta cheese.
  6. Repeat layers until ingredients are used, finishing with mozzarella cheese on top.
  7. Bake for 30-35 minutes until cheese is bubbly and golden.

Notes

  • Let the lasagne sit for 10 minutes before serving.
  • Can be made ahead and refrigerated.
