Ingredients

- 1 cup chickpeas, cooked
- 1 cup coconut milk
- 2 cups spinach, fresh
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon curry powder
- 1 teaspoon cumin
- 1 tablespoon olive oil
- Salt to taste
- Black pepper to taste
Instructions
- Heat olive oil in a pan over medium heat.
- Add chopped onion and sauté until translucent.
- Add minced garlic and sauté for another minute.
- Add curry powder and cumin, stirring for 30 seconds.
- Pour in coconut milk and stir well.
- Add chickpeas and spinach, cooking until spinach wilts.
- Season with salt and pepper to taste.
- Serve warm in a bowl.
