Ube Halaya Jam is a sweet spread made from purple yam. It has a rich flavor and vibrant color.
Ingredients

- 2 cups purple yam, cooked and mashed
- 1 cup coconut milk
- 1 cup condensed milk
- 1/2 cup sugar
- 1/2 cup butter
- 1 teaspoon vanilla extract
Instructions
- In a pan, melt butter over medium heat.
- Add mashed purple yam and mix well.
- Pour in coconut milk and stir until combined.
- Add condensed milk and sugar, mix continuously.
- Cook until thickened, about 20-30 minutes.
- Stir in vanilla extract.
- Transfer to a container and let cool before serving.

- Store in the refrigerator for up to two weeks.
- Great as a topping for toast or pancakes.
