Description

Trini Doubles are a popular street food in Trinidad made with curried chickpeas served on soft bara bread.


Ingredients

  • 1 cup chickpeas, soaked overnight
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • 1 teaspoon curry powder
  • 2 tablespoons vegetable oil
  • Salt to taste
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup water

Instructions

  1. Cook the soaked chickpeas until tender.
  2. In a pan, heat oil and sauté onion and garlic until soft.
  3. Add spices and cook for a few minutes.
  4. Add the cooked chickpeas and simmer for 10 minutes.
  5. In a bowl, mix flour, baking powder, and salt.
  6. Add water and knead into a dough.
  7. Divide dough into small balls and roll out into discs.
  8. Fry the discs in hot oil until golden.
  9. Assemble by placing curried chickpeas on bara bread.

Notes

  • Use fresh herbs for extra flavor.
  • Serve with pepper sauce for heat.
  • Make the bara bread thin for a better texture.
