Description
Trini Doubles are a popular street food in Trinidad made with curried chickpeas served on soft bara bread.
Ingredients

- 1 cup chickpeas, soaked overnight
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon turmeric
- 1 teaspoon curry powder
- 2 tablespoons vegetable oil
- Salt to taste
- 2 cups flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 3/4 cup water
Instructions
- Cook the soaked chickpeas until tender.
- In a pan, heat oil and sauté onion and garlic until soft.
- Add spices and cook for a few minutes.
- Add the cooked chickpeas and simmer for 10 minutes.
- In a bowl, mix flour, baking powder, and salt.
- Add water and knead into a dough.
- Divide dough into small balls and roll out into discs.
- Fry the discs in hot oil until golden.
- Assemble by placing curried chickpeas on bara bread.
Notes
- Use fresh herbs for extra flavor.
- Serve with pepper sauce for heat.
- Make the bara bread thin for a better texture.
