Description

Tom Kha Gai is a Thai coconut soup made with chicken and galangal.


Ingredients

  • 1 lb chicken breast, sliced
  • 1 can (13.5 oz) coconut milk
  • 4 cups chicken broth
  • 1 stalk lemongrass, chopped
  • 34 slices galangal
  • 34 kaffir lime leaves
  • 200g mushrooms, sliced
  • 23 Thai chilies, smashed
  • 2 tablespoons fish sauce
  • 1 tablespoon lime juice
  • Fresh cilantro for garnish

Instructions

  1. In a pot, combine chicken broth, lemongrass, galangal, and lime leaves. Bring to a boil.
  2. Add the sliced chicken and cook until no longer pink.
  3. Stir in coconut milk and mushrooms. Cook for 5 minutes.
  4. Add fish sauce and lime juice. Remove from heat.
  5. Garnish with fresh cilantro and serve hot.

Notes

  • Adjust the level of spiciness by adding or reducing chilies.
  • Serve with jasmine rice for a complete meal.
