Description
Tom Kha Gai is a Thai coconut soup made with chicken and galangal.
Ingredients

- 1 lb chicken breast, sliced
- 1 can (13.5 oz) coconut milk
- 4 cups chicken broth
- 1 stalk lemongrass, chopped
- 3–4 slices galangal
- 3–4 kaffir lime leaves
- 200g mushrooms, sliced
- 2–3 Thai chilies, smashed
- 2 tablespoons fish sauce
- 1 tablespoon lime juice
- Fresh cilantro for garnish
Instructions
- In a pot, combine chicken broth, lemongrass, galangal, and lime leaves. Bring to a boil.
- Add the sliced chicken and cook until no longer pink.
- Stir in coconut milk and mushrooms. Cook for 5 minutes.
- Add fish sauce and lime juice. Remove from heat.
- Garnish with fresh cilantro and serve hot.
Notes
- Adjust the level of spiciness by adding or reducing chilies.
- Serve with jasmine rice for a complete meal.
