  • 3/4 cup chopped onion
  • 3/4 cup shredded carrots
  • 3/4 cup diced celery
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley
  • 4 tablespoons butter
  • 3 cups chicken broth
  • 4 cups diced potatoes
  • 1/4 cup flour
  • 2 cups shredded cheddar cheese
  • 1.5 cups milk
  • 1/4 cup sour cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Cook the beef in a large pot until it turns brown.
  2. Drain the grease and set the beef aside.
  3. Melt one tablespoon of butter in the pot.
  4. Cook the onion, carrots, celery, basil, and parsley until they soften.
  5. Add the broth and potatoes to the pot.
  6. Boil the liquid then simmer for 15 minutes.
  7. Melt the rest of the butter in a pan and whisk in the flour.
  8. Add the milk to the pan and stir until the liquid thickens.
  9. Pour the milk mixture into the soup pot.
  10. Stir in the cheese until it melts.
  11. Add the beef and sour cream before you serve.
