Description
You can make this cheeseburger soup for a warm meal. It uses ground beef and potatoes in a creamy base.

- 1 pound ground beef
- 3/4 cup chopped onion
- 3/4 cup shredded carrots
- 3/4 cup diced celery
- 1 teaspoon dried basil
- 1 teaspoon dried parsley
- 4 tablespoons butter
- 3 cups chicken broth
- 4 cups diced potatoes
- 1/4 cup flour
- 2 cups shredded cheddar cheese
- 1.5 cups milk
- 1/4 cup sour cream
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Cook the beef in a large pot until it turns brown.
- Drain the grease and set the beef aside.
- Melt one tablespoon of butter in the pot.
- Cook the onion, carrots, celery, basil, and parsley until they soften.
- Add the broth and potatoes to the pot.
- Boil the liquid then simmer for 15 minutes.
- Melt the rest of the butter in a pan and whisk in the flour.
- Add the milk to the pan and stir until the liquid thickens.
- Pour the milk mixture into the soup pot.
- Stir in the cheese until it melts.
- Add the beef and sour cream before you serve.
Notes
- Keep your leftovers in the fridge.
- Warm the soup on low heat to prevent curdling.
- Add more cheese to your bowl for extra flavor.
