  • 1 can (14 oz) diced tomatoes
  • 1 cup beef broth
  • 1/2 cup dried apricots, chopped
  • 1/2 cup almonds, toasted
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and garlic, sauté until soft.
  3. Add beef chunks, brown on all sides.
  4. Stir in spices, cook for 1 minute.
  5. Add tomatoes and beef broth, bring to a simmer.
  6. Add dried apricots, cover, and cook for 1.5 hours.
  7. Stir in toasted almonds before serving.
