Ingredients

- 2 lbs beef, cut into chunks
- 2 tbsp olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground cinnamon
- 1 tsp ground ginger
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- 1 can (14 oz) diced tomatoes
- 1 cup beef broth
- 1/2 cup dried apricots, chopped
- 1/2 cup almonds, toasted
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and garlic, sauté until soft.
- Add beef chunks, brown on all sides.
- Stir in spices, cook for 1 minute.
- Add tomatoes and beef broth, bring to a simmer.
- Add dried apricots, cover, and cook for 1.5 hours.
- Stir in toasted almonds before serving.

- Serve with couscous or rice.
- Adjust spices to your taste.
