Description

This cold pasta salad uses fresh vegetables and a light dressing for a quick summer meal.


Ingredients

  • 16 ounces rotini pasta
  • 1 cup cherry tomatoes halved
  • 1 large cucumber diced
  • 1/2 cup red onion chopped
  • 1/2 cup black olives sliced
  • 1/2 cup feta cheese crumbled
  • 1 cup Italian vinaigrette
  • 1 teaspoon dried oregano

Instructions

  1. Boil a large pot of salted water.
  2. Cook the pasta until tender.
  3. Drain the pasta and rinse it with cold water.
  4. Place the cold pasta in a large mixing bowl.
  5. Add the tomatoes cucumber onion olives and feta cheese.
  6. Pour the dressing over the ingredients.
  7. Toss the salad to coat everything.
  8. Put the salad in the fridge for 30 minutes before you serve it.

Notes

  • Use gluten free pasta if you prefer.
  • Add grilled chicken for more protein.
  • Store leftovers in the fridge for three days.
