Description
This cold pasta salad uses fresh vegetables and a light dressing for a quick summer meal.
Ingredients

- 16 ounces rotini pasta
- 1 cup cherry tomatoes halved
- 1 large cucumber diced
- 1/2 cup red onion chopped
- 1/2 cup black olives sliced
- 1/2 cup feta cheese crumbled
- 1 cup Italian vinaigrette
- 1 teaspoon dried oregano
Instructions
- Boil a large pot of salted water.
- Cook the pasta until tender.
- Drain the pasta and rinse it with cold water.
- Place the cold pasta in a large mixing bowl.
- Add the tomatoes cucumber onion olives and feta cheese.
- Pour the dressing over the ingredients.
- Toss the salad to coat everything.
- Put the salad in the fridge for 30 minutes before you serve it.
Notes
- Use gluten free pasta if you prefer.
- Add grilled chicken for more protein.
- Store leftovers in the fridge for three days.
