Ingredients

  • 1 lb chicken thighs, boneless and skinless
  • 1 tablespoon olive oil
  • 2 cups chicken broth
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt to taste
  • Pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Rinse the jasmine rice under cold water until the water runs clear.
  2. In a pot, heat olive oil over medium heat. Add chopped onion and sauté until translucent.
  3. Add minced garlic, cumin, and paprika. Stir for 1 minute.
  4. Add chicken thighs to the pot and cook until browned on both sides.
  5. Pour in chicken broth and bring to a boil.
  6. Add rinsed rice to the pot. Stir and cover. Reduce heat to low and cook for 20 minutes.
  7. Remove from heat and let it sit covered for an additional 10 minutes.
  8. Fluff the rice with a fork and serve with cilantro on top.
