Description
A simple and flavorful dish of chicken served over rice, inspired by street food vendors.
Ingredients

- 2 cups jasmine rice
- 1 lb chicken thighs, boneless and skinless
- 1 tablespoon olive oil
- 2 cups chicken broth
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- Salt to taste
- Pepper to taste
- Fresh cilantro for garnish
Instructions
- Rinse the jasmine rice under cold water until the water runs clear.
- In a pot, heat olive oil over medium heat. Add chopped onion and sauté until translucent.
- Add minced garlic, cumin, and paprika. Stir for 1 minute.
- Add chicken thighs to the pot and cook until browned on both sides.
- Pour in chicken broth and bring to a boil.
- Add rinsed rice to the pot. Stir and cover. Reduce heat to low and cook for 20 minutes.
- Remove from heat and let it sit covered for an additional 10 minutes.
- Fluff the rice with a fork and serve with cilantro on top.
Notes
- You can use chicken breasts instead of thighs.
- Add vegetables like peas or carrots for more nutrition.
- Adjust spices to your taste.
