Ingredients

- 2 cups fresh strawberries, hulled and sliced
- 1/2 cup granulated sugar
- 1 cup heavy cream
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
- 1 packet unflavored gelatin
- 2 tablespoons cold water
Instructions
- Blend strawberries and sugar until smooth.
- In a small bowl, dissolve gelatin in cold water.
- Heat the gelatin mixture until dissolved, then mix into the strawberry puree.
- Whip heavy cream with vanilla until soft peaks form.
- Fold whipped cream into the strawberry mixture gently.
- Layer the mousse in parfait glasses.
- Chill for at least 2 hours before serving.
Notes
- Use ripe strawberries for best flavor.
- Can substitute gelatin with agar-agar for a vegan option.
- Garnish with whole strawberries for presentation.
