Ingredients

  • 2 cups spinach, chopped
  • 1 onion, diced
  • 2 tomatoes, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 2 tablespoons oil
  • Salt to taste
  • 4 cups water

Instructions

  1. Rinse lentils under cold water.
  2. In a pot, heat oil over medium heat.
  3. Add cumin seeds and let them splutter.
  4. Add onion, garlic, and ginger. Sauté until onion is translucent.
  5. Add tomatoes and cook until soft.
  6. Add turmeric powder, garam masala, and salt. Stir well.
  7. Add lentils and water. Bring to a boil.
  8. Reduce heat and simmer until lentils are tender.
  9. Add spinach and cook for another 5 minutes.
  10. Serve hot with rice or bread.
