Spinach Lentil Dal is a nutritious and hearty dish made with lentils and fresh spinach.
Ingredients

- 1 cup lentils
- 2 cups spinach, chopped
- 1 onion, diced
- 2 tomatoes, chopped
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 teaspoon garam masala
- 2 tablespoons oil
- Salt to taste
- 4 cups water
Instructions
- Rinse lentils under cold water.
- In a pot, heat oil over medium heat.
- Add cumin seeds and let them splutter.
- Add onion, garlic, and ginger. Sauté until onion is translucent.
- Add tomatoes and cook until soft.
- Add turmeric powder, garam masala, and salt. Stir well.
- Add lentils and water. Bring to a boil.
- Reduce heat and simmer until lentils are tender.
- Add spinach and cook for another 5 minutes.
- Serve hot with rice or bread.
Notes
- You can adjust the spice level to your preference.
- This dish can be stored in the refrigerator for up to three days.
- Serve with yogurt for extra creaminess.
