Description
Spinach Fatayer are triangular pastries filled with fresh spinach and herbs.
Ingredients

- 2 cups all-purpose flour
- 1/2 cup warm water
- 1/4 cup olive oil
- 1 teaspoon salt
- 1/2 teaspoon sugar
- 1 cup fresh spinach, chopped
- 1/2 cup onion, finely chopped
- 1 tablespoon lemon juice
- 1/4 teaspoon black pepper
- 1/4 teaspoon sumac
Instructions
- In a bowl, mix flour, salt, sugar, water, and olive oil to form a dough.
- Knead the dough for 5 minutes and let it rest for 30 minutes.
- In a skillet, sauté onion until translucent.
- Add spinach, lemon juice, pepper, and sumac to the skillet, cooking for 3-4 minutes.
- Roll out dough and cut into circles.
- Place filling in the center and fold into triangles.
- Bake at 375°F for 20 minutes until golden brown.

- Use fresh spinach for the best flavor.
- Adjust spices to your taste.
