A hearty and flavorful twist on classic lasagna in soup form.
Ingredients

- 1 lb ground beef
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 4 cups beef broth
- 2 cups water
- 2 cups uncooked pasta
- 2 tbsp Italian seasoning
- 1 tsp red pepper flakes
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
Instructions
- In a large pot, brown the ground beef over medium heat.
- Add the onion and garlic, cooking until soft.
- Stir in the crushed tomatoes, beef broth, water, Italian seasoning, and red pepper flakes.
- Bring to a boil, then add the uncooked pasta.
- Cook until pasta is tender, about 10 minutes.
- Stir in the ricotta cheese until melted.
- Serve hot, topped with mozzarella and Parmesan cheese.
Notes
- Adjust spice level by adding more or less red pepper flakes.
- Substitute ground turkey for a lighter option.
- Can be made vegetarian by omitting meat and using vegetable broth.
