Description
A hearty and healthy stew featuring spiced chickpeas and fresh spinach.
Ingredients

- 1 can chickpeas, drained and rinsed
- 2 cups fresh spinach
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can diced tomatoes
- 1 teaspoon cumin
- 1 teaspoon paprika
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a pot over medium heat.
- Add chopped onion and cook until soft.
- Stir in garlic and cook for another minute.
- Add diced tomatoes, chickpeas, cumin, and paprika.
- Simmer for 10 minutes.
- Add spinach and cook until wilted.
- Season with salt and pepper.
