Instructions
- Preheat the oven to 425°F (220°C).

- Spread the potatoes on a baking sheet and bake for 30-35 minutes until golden and crispy.
- In a saucepan, combine diced tomatoes, red wine vinegar, minced garlic, and cook for 10 minutes.
- In a bowl, mix mayonnaise and lemon juice to make the aioli.
- Serve the potatoes hot, topped with tomato sauce and garlic aioli.
