Description
Soup Joumou is a traditional Haitian squash soup enjoyed during New Year’s Day.
Ingredients

- 1 medium butternut squash, peeled and cubed
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 bell pepper, chopped
- 6 cups chicken or vegetable broth
- 1 teaspoon thyme
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 lime, juiced
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, garlic, carrots, celery, and bell pepper. Sauté until softened.
- Add the cubed butternut squash and stir well.
- Pour in the broth and add thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 25-30 minutes.
- Puree the soup using an immersion blender or in batches until smooth.
- Stir in lime juice and adjust seasoning if needed.
- Serve hot, garnished with fresh herbs if desired.
Notes
- For a vegetarian version, use vegetable broth.
- Add cooked meat like beef or chicken for extra protein.
- Serve with crusty bread for a complete meal.
