Description

Soup Joumou is a traditional Haitian squash soup enjoyed during New Year’s Day.


Ingredients

  • 1 medium butternut squash, peeled and cubed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 bell pepper, chopped
  • 6 cups chicken or vegetable broth
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 lime, juiced

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, garlic, carrots, celery, and bell pepper. Sauté until softened.
  3. Add the cubed butternut squash and stir well.
  4. Pour in the broth and add thyme, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 25-30 minutes.
  6. Puree the soup using an immersion blender or in batches until smooth.
  7. Stir in lime juice and adjust seasoning if needed.
  8. Serve hot, garnished with fresh herbs if desired.

Notes

  • For a vegetarian version, use vegetable broth.
  • Add cooked meat like beef or chicken for extra protein.
  • Serve with crusty bread for a complete meal.
