  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 inches ginger, sliced
  • 2 inches turmeric, sliced
  • 2 stalks lemongrass, smashed
  • 5 cups chicken broth
  • 2 medium potatoes, diced
  • 2 carrots, sliced
  • Salt to taste
  • Fresh cilantro for garnish
  • Boiled eggs for serving
  • Lime wedges for serving

Instructions

  1. Heat oil in a large pot over medium heat.
  2. Sauté onion, garlic, ginger, and turmeric until fragrant.
  3. Add the whole chicken and lemongrass to the pot.
  4. Pour in chicken broth and bring to a boil.
  5. Reduce heat and simmer for 30 minutes.
  6. Remove the chicken, shred the meat, and return it to the pot.
  7. Add potatoes and carrots, cook until tender.
  8. Season with salt to taste.
