Description
Soto Ayam is a traditional Indonesian turmeric chicken soup. It is flavorful and aromatic with a blend of spices.
Ingredients

- 1 whole chicken (about 3–4 lbs)
- 2 tablespoons vegetable oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 inches ginger, sliced
- 2 inches turmeric, sliced
- 2 stalks lemongrass, smashed
- 5 cups chicken broth
- 2 medium potatoes, diced
- 2 carrots, sliced
- Salt to taste
- Fresh cilantro for garnish
- Boiled eggs for serving
- Lime wedges for serving
Instructions
- Heat oil in a large pot over medium heat.
- Sauté onion, garlic, ginger, and turmeric until fragrant.
- Add the whole chicken and lemongrass to the pot.
- Pour in chicken broth and bring to a boil.
- Reduce heat and simmer for 30 minutes.
- Remove the chicken, shred the meat, and return it to the pot.
- Add potatoes and carrots, cook until tender.
- Season with salt to taste.
- Serve hot, garnished with cilantro, boiled eggs, and lime wedges.

- Serve with rice or noodles for a complete meal.
