Delicious smoked bone marrow served on toast with a fresh parsley salad.

- 4 beef marrow bones
- 1 tablespoon olive oil
- Salt to taste
- Freshly ground black pepper to taste
- 4 slices of crusty bread
- 1 cup fresh parsley, chopped
- 1 tablespoon lemon juice
- 1 clove garlic, minced
Instructions
- Preheat your smoker to 300°F (150°C).
- Season the marrow bones with salt and pepper.
- Place the bones in the smoker and smoke for about 30-40 minutes.
- While the bones are smoking, brush the bread with olive oil and toast it on a grill or in a pan.
- In a bowl, combine parsley, lemon juice, garlic, salt, and pepper to make the salad.
- Once the bones are done, remove them from the smoker.
- Spread the melted marrow onto the toasted bread.
- Serve with the parsley salad on the side.
