Ingredients

- 4 medium cucumbers
- 2 tablespoons salt
- 1/4 cup rice vinegar
- 2 tablespoons sesame oil
- 1 tablespoon soy sauce
- 1 teaspoon sugar
- 1/4 cup chili crunch
- 2 tablespoons chopped cilantro
Instructions
- Wash and dry the cucumbers.
- Slice the cucumbers in half lengthwise.
- Gently smash the cucumbers with a rolling pin or flat surface.
- Sprinkle salt over the smashed cucumbers and let sit for 10 minutes.
- In a bowl, mix rice vinegar, sesame oil, soy sauce, and sugar.
- Rinse the cucumbers and pat dry.
- Toss cucumbers in the dressing and arrange on a plate.
- Top with chili crunch and chopped cilantro.
Notes
- Adjust the salt to taste.
- Chili crunch can be substituted with your favorite hot sauce.
