Description
Delicious shortbread cookies with a sweet fruit filling.
Ingredients
Scale
- 2 cups all-purpose flour
- 1/2 cup powdered sugar
- 1 cup unsalted butter, softened
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup fruit jam (raspberry or apricot)
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix flour, powdered sugar, and salt.
- Beat in softened butter and vanilla extract until smooth.
- Chill the dough for 30 minutes.
- Roll out dough on a floured surface to 1/4 inch thickness.
- Cut out cookies with a cookie cutter.
- Cut out centers of half the cookies.
- Place cookies on a baking sheet and bake for 10-12 minutes.
- Let cool and spread jam on solid cookies.
- Top with cookie halves with cutouts.
Notes
- Use different jams for variety.
- Store in an airtight container.
