Description

Delicious shortbread cookies with a sweet fruit filling.


Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup fruit jam (raspberry or apricot)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix flour, powdered sugar, and salt.
  3. Beat in softened butter and vanilla extract until smooth.
  4. Chill the dough for 30 minutes.
  5. Roll out dough on a floured surface to 1/4 inch thickness.
  6. Cut out cookies with a cookie cutter.
  7. Cut out centers of half the cookies.
  8. Place cookies on a baking sheet and bake for 10-12 minutes.
  9. Let cool and spread jam on solid cookies.
  10. Top with cookie halves with cutouts.
