Ingredients

- 4 large eggs
- 2 cups diced tomatoes
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 4 tortillas
- 1 cup crumbled feta cheese
Instructions
- Heat oil in a pan over medium heat.
- Add onion and red bell pepper. Cook until softened.
- Stir in garlic, cumin, paprika, salt, and pepper.
- Add diced tomatoes and simmer for 10 minutes.
- Make wells in the sauce and crack an egg into each well.
- Cover and cook until eggs are set.
- Warm tortillas in another pan.
- Place shakshuka mixture onto each tortilla and sprinkle with feta.
- Wrap the tortillas and serve warm.
