Ingredients

- 1 cup basmati rice
- 1/4 teaspoon saffron threads
- 2 cups chicken broth
- 2 tablespoons olive oil
- 1 pound chicken breast, sliced
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Rinse the basmati rice under cold water.
- Soak saffron in 2 tablespoons of warm water.
- In a pot, heat olive oil over medium heat.
- Add rice and toast for 2 minutes.
- Pour in chicken broth and saffron water.
- Bring to a boil, then reduce heat and cover.
- Cook for 15 minutes until rice is tender.
- While rice cooks, season chicken strips with garlic powder, paprika, salt, and pepper.
- Grill chicken on medium heat for 6-8 minutes per side.
- Fluff rice and serve with grilled chicken. Garnish with parsley.
Notes
- Use a meat thermometer to ensure chicken is cooked to 165°F.
- You can add vegetables like peas or bell peppers to the rice.
- For more flavor, marinate the chicken for a few hours.
