Instructions

  1. Brown the Beef: In a skillet over medium heat, add the ground beef. Cook until browned, breaking it up with a spoon. Drain excess fat.
  2. Sauté Aromatics: In the same skillet, add the diced onion and minced garlic. Cook until the onion is translucent, about 3–4 minutes.
  3. Transfer to Crockpot: Place the browned beef and sautéed onions/garlic into the crockpot.
  4. Add Rotel and Spices: Pour the entire can of Rotel (including the liquid) over the beef. Sprinkle cumin, chili powder, smoked paprika, cayenne (if using), salt, and pepper. Stir to combine.
  5. Optional Add‑Ins: If you like corn or beans, fold them in now.
  6. Cook: Cover and cook on low for 4–5 hours or on high for 2–3 hours. The flavors meld beautifully, and the beef stays tender.
