Ingredients

- 6 quail eggs
- 1 cup cooked quinoa
- 1/2 avocado, sliced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup feta cheese, crumbled
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Cook quinoa according to package instructions.
- In a small pot, bring water to a boil and gently add quail eggs.
- Boil the quail eggs for about 3 minutes, then transfer to ice water.
- Peel the quail eggs once cooled.
- In a bowl, combine quinoa, avocado, tomatoes, and feta cheese.
- Slice the quail eggs in half and place on top of the mixture.
- Drizzle with olive oil and season with salt and pepper.
