Instructions
- Preheat your oven to 375°F (190°C). Line two baking sheets with parchment paper or silicone baking mats.
- In a large bowl, or the bowl of a stand mixer, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (2-3 minutes).
- Beat in the egg and vanilla extract until well combined, scraping down the sides.
- Stir in the pumpkin puree until just incorporated.
- In a separate medium bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, ginger, and cloves.
- Gradually add the dry ingredients to the wet, mixing on low speed until just combined. Do not overmix.
- Fold in the chocolate chips until evenly distributed.
- Drop rounded tablespoons of dough onto the prepared baking sheets, leaving about 2 inches between each.
- Bake for 10-12 minutes, or until edges are lightly golden and centers are slightly soft.
- Remove from oven and cool on sheets for 5 minutes before transferring to a wire rack to cool completely.
