Instructions
- Take the roast out of your refrigerator 2 hours before you cook it.
- Set your oven to 450 degrees Fahrenheit.

- Rub the spice mixture on all sides of the roast.
- Place the meat in a roasting pan with the fat side up.
- Cook at 450 degrees for 15 minutes.
- Lower the oven temperature to 325 degrees.
- Bake until the meat reaches 120 degrees for medium-rare.
- Remove the roast from the oven.
- Let the meat rest for 20 minutes before you slice it.
