Description

Pozole Verde with Chicken is a traditional Mexican soup made with hominy, chicken, and green tomatillo sauce.


Ingredients

  • 2 cups hominy
  • 1 lb chicken breast
  • 4 cups chicken broth
  • 1 cup tomatillos, husked and chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 jalapeño, chopped
  • 1/2 cup cilantro, chopped
  • Salt, to taste
  • Lime wedges, for serving

Instructions

  1. Rinse the hominy and set aside.
  2. In a pot, combine chicken, broth, onion, and garlic. Bring to a boil.
  3. Reduce heat and simmer until chicken is cooked, about 20 minutes.
  4. Remove chicken, shred it, and return it to the pot.
  5. Add tomatillos, jalapeño, and hominy. Simmer for 15 minutes.
  6. Stir in cilantro and season with salt.
  7. Serve hot with lime wedges.

Notes

  • Adjust spice level by adding more jalapeño.
  • Use leftover chicken for quicker preparation.
  • Garnish with radishes and avocado for extra flavor.
