Ingredients

- 4 medium potatoes, peeled and grated
- 1 onion, grated
- 2 eggs
- 1/4 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Oil for frying
Instructions
- Grate the potatoes and onion into a bowl.
- Drain excess moisture from the mixture.
- Add eggs, flour, salt, and pepper. Mix well.
- Heat oil in a skillet over medium heat.
- Spoon the mixture into the skillet, flattening slightly.
- Fry until golden brown, about 4 minutes per side.
- Transfer to a paper towel to drain excess oil.
Notes
- Serve with sour cream or applesauce.
- Can be made ahead and reheated in the oven.
