Ingredients

  • 1 pound ground chicken
  • 2 tablespoons olive oil
  • 1/2 cup diced onion
  • 2 cloves minced garlic
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup sliced kalamata olives
  • 2 cups fresh spinach
  • 1/2 cup crumbled feta cheese
  • 1 tablespoon lemon juice

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add onion and cook for three minutes.
  3. Add ground chicken and garlic to the pan.
  4. Brown the chicken until no longer pink.
  5. Stir in oregano, salt, pepper, and olives.
  6. Add spinach and cook until it wilts.
  7. Remove the skillet from the heat.
  8. Stir in feta cheese and lemon juice before serving.
