- 1 pound ground chicken
- 2 tablespoons olive oil
- 1/2 cup diced onion
- 2 cloves minced garlic
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup sliced kalamata olives
- 2 cups fresh spinach
- 1/2 cup crumbled feta cheese
- 1 tablespoon lemon juice
Instructions
- Heat olive oil in a skillet over medium heat.
- Add onion and cook for three minutes.
- Add ground chicken and garlic to the pan.
- Brown the chicken until no longer pink.
- Stir in oregano, salt, pepper, and olives.
- Add spinach and cook until it wilts.
- Remove the skillet from the heat.
- Stir in feta cheese and lemon juice before serving.
Notes
- Swap chicken for ground turkey if you prefer.
- Store leftovers in your fridge for three days.
- Add red pepper flakes to increase the heat.
