Ingredients

  • 1 lb ground chicken
  • 1/2 cup breadcrumbs
  • 1 egg
  • 2 cloves garlic minced
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups cooked white rice
  • 1 cup diced cucumber
  • 1 cup halved cherry tomatoes
  • 1/2 cup sliced red onion
  • 1/2 cup feta cheese crumbles
  • 1/2 cup tzatziki sauce

Instructions

  1. Mix ground chicken, breadcrumbs, egg, garlic, oregano, salt, and pepper in a bowl.
  2. Form the mixture into small meatballs.
  3. Heat oil in a large pan over medium heat.
  4. Cook meatballs for 10 minutes until brown and cooked through.
  5. Place cooked rice into four bowls.
  6. Add meatballs and chopped vegetables to each bowl.
  7. Top with feta cheese and tzatziki sauce.
