Ingredients

- 1 lb ground chicken
- 1/2 cup breadcrumbs
- 1 egg
- 2 cloves garlic minced
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 cups cooked white rice
- 1 cup diced cucumber
- 1 cup halved cherry tomatoes
- 1/2 cup sliced red onion
- 1/2 cup feta cheese crumbles
- 1/2 cup tzatziki sauce
Instructions
- Mix ground chicken, breadcrumbs, egg, garlic, oregano, salt, and pepper in a bowl.
- Form the mixture into small meatballs.
- Heat oil in a large pan over medium heat.
- Cook meatballs for 10 minutes until brown and cooked through.
- Place cooked rice into four bowls.
- Add meatballs and chopped vegetables to each bowl.
- Top with feta cheese and tzatziki sauce.
Notes
- Substitute ground turkey for chicken.
- Keep leftovers in the fridge for three days.
- Include kalamata olives for more salt.
