Ingredients

  • 1 pound dried red kidney beans
  • 1 pound sliced smoked sausage
  • 1 diced yellow onion
  • 1 diced green bell pepper
  • 3 diced celery stalks
  • 4 minced garlic cloves
  • 6 cups water
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon cayenne pepper
  • 3 cups cooked white rice

Instructions

  1. Soak your beans in water for eight hours.
  2. Drain your beans.
  3. Slice your sausage.
  4. Brown your sausage in a pot.
  5. Remove your sausage from the pot.
  6. Cook your onion, pepper, and celery in the same pot.
  7. Add your garlic and cook for one minute.
  8. Pour in your water.
  9. Add your beans and spices.
  10. Boil the water.
  11. Lower the heat to a simmer.
  12. Cook your beans for two hours.
  13. Mash some beans against the pot wall to make the sauce thick.
  14. Stir your sausage back into the pot.
  15. Serve your beans over rice.

Notes

  • Use a pot with a lid.
  • Add salt at the end of cooking.
  • Store your leftovers in the fridge.
