- 1 box pistachio pudding mix
- 1 cup milk
- 1/2 cup vegetable oil
- 3 eggs
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 cup chopped pistachios
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine pudding mix, milk, and oil.
- Add eggs and mix until smooth.
- Stir in flour and baking powder.
- Add chopped pistachios and vanilla extract, mixing well.
- Pour the batter into a greased cake pan.
- Bake for 30-35 minutes or until a toothpick comes out clean.
- Allow to cool before serving.
Notes
- Store leftovers in an airtight container.
- For added flavor, top with whipped cream.
- Use unsalted pistachios for better taste.
