Delicious and nutritious energy balls made with pistachios and chocolate.


Ingredients

  • 1 cup pistachios, shelled
  • 1/2 cup dates, pitted
  • 1/4 cup cocoa powder
  • 1/4 cup honey
  • 1/4 cup almond butter
  • 1 teaspoon vanilla extract

Instructions

  1. In a food processor, blend pistachios until finely chopped.
  2. Add dates, cocoa powder, honey, almond butter, and vanilla extract.
  3. Process until mixture is well combined and sticky.
  4. Roll mixture into small balls, about 1 inch in diameter.
  5. Place energy balls on a baking sheet lined with parchment paper.
  6. Refrigerate for at least 30 minutes to set.
