Delicious and nutritious energy balls made with pistachios and chocolate.
Ingredients

- 1 cup pistachios, shelled
- 1/2 cup dates, pitted
- 1/4 cup cocoa powder
- 1/4 cup honey
- 1/4 cup almond butter
- 1 teaspoon vanilla extract
Instructions
- In a food processor, blend pistachios until finely chopped.
- Add dates, cocoa powder, honey, almond butter, and vanilla extract.
- Process until mixture is well combined and sticky.
- Roll mixture into small balls, about 1 inch in diameter.
- Place energy balls on a baking sheet lined with parchment paper.
- Refrigerate for at least 30 minutes to set.
Notes
- Store in an airtight container in the refrigerator.
- These can be frozen for longer storage.
- Adjust sweetness by adding more or less honey.
