Ingredients

  • 1/2 cup unsalted butter
  • 1 cup all-purpose flour
  • 4 large eggs
  • 1/2 cup pistachio paste
  • 1 cup heavy cream
  • 1 cup raspberries
  • 1 cup powdered sugar
  • 1 tablespoon lemon juice

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a saucepan, combine water and butter; bring to a boil.
  3. Add flour and stir until dough forms.
  4. Remove from heat; let cool slightly.
  5. Beat in eggs one at a time until smooth.
  6. Pipe dough onto baking sheet into 4-inch strips.
  7. Bake for 25 minutes until golden.
  8. Let cool completely.
  9. Whip heavy cream and fold in pistachio paste.
  10. Fill éclairs with pistachio cream.
  11. Blend raspberries with powdered sugar and lemon juice for glaze.
  12. Top filled éclairs with raspberry glaze.
