Ingredients

- 1 cup water
- 1/2 cup unsalted butter
- 1 cup all-purpose flour
- 4 large eggs
- 1/2 cup pistachio paste
- 1 cup heavy cream
- 1 cup raspberries
- 1 cup powdered sugar
- 1 tablespoon lemon juice
Instructions
- Preheat oven to 400°F (200°C).
- In a saucepan, combine water and butter; bring to a boil.
- Add flour and stir until dough forms.
- Remove from heat; let cool slightly.
- Beat in eggs one at a time until smooth.
- Pipe dough onto baking sheet into 4-inch strips.
- Bake for 25 minutes until golden.
- Let cool completely.
- Whip heavy cream and fold in pistachio paste.
- Fill éclairs with pistachio cream.
- Blend raspberries with powdered sugar and lemon juice for glaze.
- Top filled éclairs with raspberry glaze.
