Description

Ingredients

  • 1 small head of cabbage, shredded
  • 2 carrots, grated
  • 1 onion, thinly sliced
  • 23 Scotch bonnet peppers, sliced
  • 1 cup white vinegar
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon thyme

Instructions

  1. Shred the cabbage and place it in a large bowl.
  2. Grate the carrots and add them to the bowl.
  3. Thinly slice the onion and add it to the mixture.
  4. Add the sliced Scotch bonnet peppers.
  5. In a separate bowl, mix vinegar, salt, black pepper, and thyme.
  6. Pour the vinegar mixture over the vegetables and mix well.
  7. Pack the mixture into a clean jar, pressing down to eliminate air pockets.
  8. Seal the jar and refrigerate for at least 24 hours before serving.

Notes

  • Adjust the number of Scotch bonnet peppers to control spice level.
  • Letting it sit for a few days enhances the flavor.
