Description
Pikliz is a spicy pickled cabbage slaw popular in Haitian cuisine. It adds a tangy and spicy kick to dishes.
Ingredients

- 1 small head of cabbage, shredded
- 2 carrots, grated
- 1 onion, thinly sliced
- 2–3 Scotch bonnet peppers, sliced
- 1 cup white vinegar
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon thyme
Instructions
- Shred the cabbage and place it in a large bowl.
- Grate the carrots and add them to the bowl.
- Thinly slice the onion and add it to the mixture.
- Add the sliced Scotch bonnet peppers.
- In a separate bowl, mix vinegar, salt, black pepper, and thyme.
- Pour the vinegar mixture over the vegetables and mix well.
- Pack the mixture into a clean jar, pressing down to eliminate air pockets.
- Seal the jar and refrigerate for at least 24 hours before serving.
Notes
- Adjust the number of Scotch bonnet peppers to control spice level.
- Letting it sit for a few days enhances the flavor.
- This slaw can last up to a month in the fridge.
