Ingredients

  • 2 cups cooked rice
  • 1 cup cherry tomatoes
  • 1 cucumber
  • 1/4 red onion
  • 1/2 cup feta cheese
  • 1/2 cup tzatziki sauce
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • 2 garlic cloves

Instructions

  1. Whisk oil, lemon juice, garlic, and oregano in a bowl.
  2. Marinate chicken in the mixture for 15 minutes.
  3. Cook chicken in a pan over medium heat for 6 minutes per side.
  4. Slice chicken into pieces.
  5. Divide rice into four containers.
  6. Add chicken and vegetables to the containers.
  7. Top with feta and tzatziki.
