Description
This Persian Herb Frittata, known as Kuku Sabzi, is a flavorful dish packed with fresh herbs and eggs.
Ingredients

- 8 large eggs
- 2 cups fresh parsley, chopped
- 1 cup fresh cilantro, chopped
- 1 cup fresh dill, chopped
- 1/2 cup green onions, chopped
- 1/4 cup walnuts, chopped
- 1 teaspoon turmeric
- Salt and pepper to taste
- 1/4 cup olive oil
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, whisk together the eggs, salt, pepper, and turmeric.
- Add the chopped herbs and walnuts to the egg mixture and stir until combined.
- Heat olive oil in a skillet over medium heat.
- Pour the egg mixture into the skillet and cook for about 5 minutes until the edges start to set.
- Transfer the skillet to the preheated oven and bake for 20 minutes or until the top is golden and set.
- Remove from the oven and let it cool for a few minutes before slicing.
- Serve warm or at room temperature.
