Description

Ingredients

  • 2 cups dandelion petals
  • 4 cups water
  • 0.25 cup lemon juice
  • 1 package fruit pectin
  • 1 cup honey
  • 2 cups sugar

Instructions

  1. Pick dandelion flowers and remove green parts.
  2. Boil petals in water for ten minutes.
  3. Let petals steep for two hours.
  4. Strain liquid through a cloth into a pot.
  5. Mix liquid with lemon juice and pectin.
  6. Bring mixture to a boil and add honey and sugar.
  7. Boil for one minute while you stir.
  8. Pour jelly into jars and seal them.
  9. Process jars in a water bath for ten minutes.

Notes

  • Use only yellow petals to prevent a bitter taste.
  • Pick flowers from areas without chemicals.
  • Store jars in a cool place.
