- 1 cup vegetable oil
- 4 large eggs
- 3 cups grated carrots
- 1/2 cup chopped walnuts
- 8 ounces cream cheese
- 1/4 cup softened butter
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350 degrees Fahrenheit
- Grease a 9×13 inch baking pan
- Whisk flour, sugars, baking soda, baking powder, and spices in a large bowl
- Mix oil and eggs in a separate bowl
- Combine the wet and dry ingredients
- Fold in the grated carrots and walnuts
- Pour the batter into your prepared pan
- Bake for 30 minutes
- Cool the bars completely in the pan
- Beat cream cheese, butter, powdered sugar, and vanilla until smooth
- Spread the frosting over the cooled bars
- Cut into squares and serve
