Description
Panjiri is a traditional North Indian sweet made from whole wheat flour, ghee, and nuts. It is often consumed for its energy-boosting properties.
Ingredients

- 2 cups whole wheat flour
- 1 cup ghee
- 1 cup jaggery, grated
- 1/2 cup mixed nuts (almonds, cashews, pistachios)
- 1/4 cup poppy seeds
- 1/4 cup melon seeds
- 1/2 teaspoon cardamom powder
- 1/4 cup dried coconut, grated
Instructions
- Heat ghee in a pan over medium heat.
- Add whole wheat flour and roast until golden brown.
- Add poppy seeds and melon seeds; roast for a few minutes.
- Stir in the grated jaggery until melted.
- Add mixed nuts, cardamom powder, and coconut; mix well.
- Remove from heat and let it cool.
- Once cool, shape the mixture into small balls or spread it on a plate and cut into pieces.
