Description

Ingredients

  • Semolina – 1 cup
  • All-purpose flour – 2 tablespoons
  • Baking soda – 1/2 teaspoon
  • Water – as needed
  • Chickpeas – 1 cup (boiled)
  • Potatoes – 2 (boiled and mashed)
  • Onion – 1 (finely chopped)
  • Cilantro – 1/4 cup (chopped)
  • Mint leaves – 1/4 cup (chopped)
  • Spices (cumin powder, chaat masala) – to taste
  • Pani (spicy water) – 4 cups

Instructions

  1. Mix semolina, flour, and baking soda in a bowl.
  2. Add water gradually to form a stiff dough.
  3. Cover the dough and let it rest for 30 minutes.
  4. Roll small balls of dough and flatten them into thin discs.
  5. Deep fry the discs in hot oil until puffed and golden brown.
  6. Prepare the filling by mixing boiled chickpeas, potatoes, onion, cilantro, mint, and spices.
  7. Take each puri, make a small hole, and fill it with the mixture.
  8. Serve with pani on the side for dipping.
