Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Brown the oxtail on all sides.
  3. Add onion, carrots, and garlic. Sauté until softened.
  4. Stir in tomato paste, thyme, and bay leaf.
  5. Add beef broth and bring to a boil.
  6. Reduce heat and simmer for 2 hours until oxtail is tender.
  7. Add butter beans and cook for an additional 15 minutes.
  8. Season with salt and pepper before serving.
