A simple and hearty one pot meal featuring pumpkin, mushrooms, chicken, and rice.
Ingredients

- 2 cups of rice
- 1 lb chicken thighs, diced
- 1 cup pumpkin, cubed
- 1 cup mushrooms, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 tsp thyme
- 1 tsp salt
- 1/2 tsp pepper
- 2 tbsp olive oil
Instructions
- In a large pot, heat olive oil over medium heat.
- Add onion and garlic, sauté until soft.
- Add chicken and cook until browned.
- Stir in pumpkin and mushrooms, cooking for 5 minutes.
- Add rice, broth, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and cover.
- Simmer for 20 minutes or until rice is cooked.
- Fluff with a fork and serve hot.
Notes
- Adjust spices to your taste.
- Leftovers can be stored in the fridge for up to 3 days.
- Use brown rice for a healthier option.
