Ingredients

  • 1 cup pumpkin, cubed
  • 1 cup mushrooms, sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 tsp thyme
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 tbsp olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onion and garlic, sauté until soft.
  3. Add chicken and cook until browned.
  4. Stir in pumpkin and mushrooms, cooking for 5 minutes.
  5. Add rice, broth, thyme, salt, and pepper.
  6. Bring to a boil, then reduce heat and cover.
