Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound lean ground beef
  • 1 medium yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup milk
  • 12 ounces short pasta (e.g., penne, rotini)
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, chopped, for garnish

Instructions

  1. In a large pot, heat olive oil over medium-high heat. Brown ground beef, breaking it up, until no pink remains (5-7 mins). Drain fat.
  2. Reduce heat to medium. Add chopped onion; cook until softened (5 mins).
  3. Stir in 2 minced garlic cloves, Italian seasoning, salt, and pepper. Cook 1 minute until fragrant.
  4. Push beef mixture aside. Add butter to the empty side; melt. Add 4 minced garlic cloves to butter; cook 30 seconds until fragrant.
  5. Stir garlic butter into beef mixture.
  6. Pour in beef broth and milk. Bring to a gentle simmer, scraping pot bottom.
  7. Add uncooked pasta, ensuring it’s mostly submerged. Stir well.
  8. Cover, reduce heat to low, and simmer 12-15 minutes, or until pasta is al dente and liquid absorbed. Stir occasionally.
  9. Remove from heat. Stir in heavy cream and 1/2 cup Parmesan cheese until melted and creamy.
  10. Taste and adjust seasoning.
  11. Garnish with fresh chopped parsley and serve immediately with extra Parmesan.

Notes

  • For a richer flavor, consider using whole milk or half-and-half.
  • If the sauce is too thick, add a splash more broth or milk.
  • Don’t overcrowd the pot; use a large enough vessel to ensure even cooking.
  • Freshly grated Parmesan cheese always tastes best!
  • Feel free to add a pinch of red pepper flakes for a subtle kick.
