A hearty one-pot chickpea and spinach stew that is easy to make and packed with flavor.
Ingredients

- 1 can chickpeas, drained and rinsed
- 2 cups fresh spinach
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can diced tomatoes
- 1 teaspoon cumin
- 1 teaspoon paprika
- 2 cups vegetable broth
- Salt to taste
- Pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, sauté until soft.
- Add chickpeas, diced tomatoes, cumin, and paprika.
- Pour in vegetable broth and bring to a boil.
- Reduce heat and simmer for 15 minutes.
- Add spinach and cook until wilted.
- Season with salt and pepper.
- Serve warm.
